Eating plant-based foods is better for us and the planet. I try to eat 30 different plants a week to get a variety of vitamins and minerals. I've been a vegetarian for my entire adult life, which is a few decades, wow! I stopped eating meat in my early twenties when I learned the truth and cruelty ofΒ factory farming. That was only the beginning.Β
Since those early days, I've educated myself and refined my diet so that it closely resembles the Rainbow Diet π (eating as many colors as you can) and the Mediterranean style π« which is one of the Blue Zones longevity diets.
π Mostly fruits, vegetables, whole grains, beans, nuts, legumes, good fats from olive oil
π‘ Very little dairy, fish, processed foods, or sweets
π No meat
Experiment and have fun! I love to cook. It calms me down and grounds me in the here and now. It's also a creative process for me, because I like to use what I have on hand and go with my gut, so to speak. I love cookbooks and to get inspiration from them, but I rarely follow recipes to the letter. I substitute with things I have or what sounds better to me, and swap out dairy and meat ingredients with plants.Β
YOU can learn to do this too - it just takes a little experimentation/creativity, using your five senses, and practice. If this sounds daunting, then start small with an easy substitution such as swapping out different veggies for a recipe. Notice how it worked including the taste, texture, and aroma.Β
